It is best that you do not can in an instant pot as it will not work out. Even the USDA recommends that you do not do this. A pressure canner needs to hold at least 4-quart sized jars and be able to set their pressure to 5, 10 or 15. Instant pots cannot reach that amount of pressure. Thus, it is best that you do not use the pot for such purposes and resort to other methods.
